I love hiking, waterfalls, anything Nutrition related, and you will often find me with a glass of red wine in hand. After working in the “real” world I have realized 2-3 weeks vacation per year isn’t nearly enough to see this amazing world of ours. We’re excited to welcome two more cubicle refugees into the real world in just a few weeks’ time! It’s taken us five years to get from the Arctic Ocean to Nicaragua on our Trans-Americas Journey through North, Central and South America so be prepared for time to lose its meaning once you hit the road. Well EmilySue…..news doesn’t travel as fast in my neck of the woods, so I’m glad that I postponed my call to HR regarding the plethora of vacation time that you seemed to have. I am so proud of you…for going for it….for doing something so brave for all the right reasons = WHY NOT!!!!

Stephanie!!! How are you?! Thanks for saying hi on the blog and for your encouragement. It has definitely been an amazing journey so far. We basically just decided to do a mini retirement now before kids because real retirement just seems so depressingly far away
